Ocha no Kanbayashi: four centuries of tradition in Uji

The Kanbayashi family, originally from a powerful clan in the Ayabe region, moved to Uji in 1558 (Eiroku era) and has since served both the imperial court and the shogunate, becoming official tea masters during the Edo period. Today, led by Teruyo Kanbayashi-san, the company continues to honor its ancestral legacy, combining traditional and modern techniques to preserve the essence of tea, its taste, color and aroma.

The Uji area, with its unique climate and terroir, is the ideal place for tea cultivation. Here, the monk Myōe began cultivating tea about 800 years ago, and since then Uji has become synonymous with the highest quality tea. Ocha no Kanbayashi selects premium leaves from each field, highlighting the unique characteristics of each area, to create exceptional teas.

Description

The excellence of tea stems

Shincha kukicha karigane Aokaede (青かえで) is a premium stem tea produced by the historic Ocha no Kanbayashi of Uji. Being a kukicha karigane, it’s made with tender stems and buds from the tea plant, giving it a sweet, delicate, and umami flavor, enriched by the freshness typical of shincha, the tea from the first spring harvest.

This makes it a refined and unique tea, perfect for those who appreciate the more subtle and elegant flavors of Japan.

What makes karigane special

Karigane (雁ヶ音) is a very high-quality kukicha, traditionally obtained from the stems and buds of gyokuro plants. Unlike standard kukicha, which uses more mature and woody stems (often from bancha plants), karigane is made with more tender and premium materials, giving it a fresher aroma, sweeter flavor, and more defined umami.

Historically, the term karigane was reserved for kukicha obtained from gyokuro plants, but today it indicates any high-quality kukicha.
